Wild Mushroom and White Cheddar Pasta
Yield: 12 portions

Ingredient   Amount
Mushrooms, fresh, mixed 3 ¼ lb.
Garlic, minced 3 tbsp. plus 1 tsp.
Shallot, small dice 3 tbsp. plus 1 tsp.
Onion, small dice ½ cup
Butter    ¾ cup
Salt To taste
Pepper   To taste
Stouffer’s® White Cheddar Mac & Cheese, hot 108 oz.
Truffle oil (optional)   To taste
Scallion, sliced As needed

 

Instructions:
1. In a food processor, pulse mushrooms to create fine pieces. Sauté mushrooms, garlic, shallot, and onion in butter until tender. Season to taste. Reserve refrigerated for service.
2. To serve, place 9 oz. of Stouffer’s® White Cheddar Mac & Cheese in a hot pan with 3 oz. of the mushroom mixture and heat until warmed through. Place in a bowl and drizzle with truffle oil, if desired, and garnish with scallions.
